Course Description

 This online course will teach everything you will need to know to create some fantastic Cajun dinners. This is a 12-lesson comprehensive course on Cajun cooking includes methods and history, but will focus on teaching you several unique techniques that Cajuns have used for over 300 years.

You will learn the correct terminology for many of the classic Cajun dishes. We will also cover other areas that revolve around Cajun cooking such as Creole cuisine and Soul food. You will learn classic Cajun dishes like etouffee, Louisiana Gumbo and Creole Jambalaya. We will also teach you how to make a proper roux- the backbone of any Cajun dish. We will also teach you how to prepare some pretty unusual critters like alligator Gar, Turtles and North American Alligator. There will be a  lesson all about Crayfish, Louisiana's favorite protein, which you will learn how to properly clean and cook for a multitude of classic recipes.
