This course is designed to teach popular regional and multicultural recipes, as well as tips, serving ideas, and a bit of etiquette and customs. The lessons are arranged by meal, so that one can easily translate the lessons to real life cooking situations. If you are a vegetarian or on a restricted diet, this class may be difficult for you. Most of the recipes have been adjusted to fit a somewhat western taste, but remain interesting and as true to their cultures as possible. If you have never cooked before, or have some discomfort in the kitchen, you may want to take Cooking Basics, another great class on UniversalClass first.

All required reading assignments are available free on the internet, or can be found in the shared files. They are provided as supplements. All recipes published in the class, however, are either public domain or the inventions or deductions of the instructor, Nicole Lasher, or family members who have given permission for them to be published, and for financial compensation to be received through her.

Course Description

A collection of regional and multicultural recipes, instructions, and tips. If you've never cooked before, I suggest you take Cooking Basics first, and then come back to this. You won't have to be a gourmet to get through this class, but you will work. Lessons are arranged by meals, so that your family, room mates, or dinner guests will be your vict-I-mean taste testers.

This course covers a variety of recipes and styles, including waffles, bento, Italian regional dishes, advanced sandwiching including bread making and more. So come on in, and learn something new.

Lesson 05 - Soups, Dumplings, and Stews

A few soup, stew, and dumpling recipes and tips.

Lesson 06 - Spaghetti Night

Two Italian meals for your "spaghetti night", neither of them for spaghetti.

Lesson 7 Phase 2 Southern Cooking Intro

A brief introduction to southern cooking, and recipes for seasoned salt, barbecue sauces, stocks, and gravies.

Certificates may be awarded by the instructor at his/her own discretion and are based on student merit.
